  • 2 pounds (900g) russet potatoes
  • 4 tablespoons (60g) unsalted butter, softened
  • 2 tablespoons (30g) truffle butter
  • 1/2 cup (120ml) whole milk, warmed
  • 2 garlic cloves, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh chives, chopped (optional)

Instructions

  1. Peel and chop the potatoes into roughly 1.5-inch chunks.
  2. Place potatoes in a large pot, cover with cold water by about 1 inch, add a pinch of salt, and bring to a boil.
  3. Reduce heat to simmer and cook for 15-20 minutes until fork-tender.
  4. Drain potatoes thoroughly in a colander.
  5. Return hot potatoes to the warm pot and shake over low heat for 1-2 minutes to evaporate excess moisture.
  6. Mash potatoes using a potato ricer or masher until smooth.
  7. Warm the milk and soften the unsalted butter and truffle butter (do not melt completely).
  8. Slowly fold softened butters into mashed potatoes with a wooden spoon or spatula.
  9. Gradually add warm milk until desired creaminess is reached.
  10. Stir in minced garlic, salt, and freshly ground black pepper to taste.
  11. Sprinkle chopped fresh chives on top if desired.
  12. Serve immediately or keep warm in a low oven (200°F / 93°C) for up to 20 minutes.

Notes

Do not overmix potatoes to avoid gluey texture. Warm milk and soften butter before mixing for best creaminess. Use truffle butter sparingly as its flavor is potent. For vegan version, substitute plant-based milk and vegan truffle butter.
