  • ½ cup chicken broth (120 ml)
  • ¼ cup sun-dried tomatoes, chopped (about 40 g)
  • ½ teaspoon red pepper flakes
  • ½ cup grated Parmesan cheese (about 50 g)
  • 1 teaspoon Italian seasoning
  • 4 cups fresh baby spinach (about 120 g)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, thinly sliced
  • Salt and pepper (to taste)
  • A squeeze of fresh lemon juice (optional)

Instructions

  1. Pat the pork chops dry with paper towels and season both sides generously with salt and freshly ground black pepper.
  2. Heat 2 tablespoons olive oil over medium-high heat in a large heavy-bottomed skillet. Once shimmering, add the pork chops and cook 4-5 minutes per side until golden brown and cooked through (internal temperature 145°F / 63°C). Remove chops to a plate and tent with foil to keep warm.
  3. Reduce heat to medium, add minced garlic to the skillet and sauté until fragrant, about 30 seconds to 1 minute, stirring constantly to avoid burning.
  4. Pour in chicken broth and heavy cream, scraping up any browned bits from the pan. Stir in chopped sun-dried tomatoes, red pepper flakes, Italian seasoning, and Parmesan cheese. Stir gently until the cheese melts and the sauce thickens slightly, about 4-5 minutes.
  5. Nestle the pork chops back into the skillet, spoon sauce over them, and simmer together for another 3-4 minutes to absorb flavors. Avoid overcooking.
  6. While the sauce simmers, melt butter in a separate pan over medium heat. Add sliced garlic and cook gently until golden and fragrant, about 1-2 minutes.
  7. Add fresh baby spinach, season with salt and pepper, and sauté until just wilted, about 2-3 minutes. Finish with a squeeze of fresh lemon juice if desired.
  8. Plate the pork chops, spoon extra creamy sauce over the top, and serve with a generous portion of tender garlic spinach alongside. Serve immediately.

Notes

If the sauce gets too thick, add a splash of chicken broth or cream to loosen it. Avoid burning garlic to prevent bitterness. Rest pork chops tented with foil to keep them juicy. Bone-in pork chops can be used but may require extra cooking time. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
