  • 3 large boneless, skinless chicken breasts (about 1.5 pounds / 680g), cooked and shredded
  • 8 slices bacon, cooked crisp and chopped
  • 8 oz (225g) cream cheese, softened (full-fat recommended)
  • 1.5 cups (170g) shredded sharp cheddar cheese
  • ½ cup (120ml) sour cream (can substitute Greek yogurt)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 packet (about 1 ounce / 28g) ranch seasoning mix
  • ¼ cup (about 15g) chopped green onions, for garnish
  • Salt and black pepper to taste

Instructions

  1. Cook the chicken breasts by boiling for 15-20 minutes or baking at 375°F (190°C) for 25-30 minutes until internal temperature reaches 165°F (74°C). Let cool slightly, then shred using two forks or a mixer.
  2. Cook bacon in a skillet over medium heat for 8-10 minutes until crispy. Drain on paper towels and chop into bite-sized pieces. Reserve some whole pieces for topping if desired.
  3. In a large bowl, combine softened cream cheese, sour cream, ranch seasoning, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.
  4. Add shredded cheddar cheese and most of the chopped bacon (reserve some for the crust), then fold in the shredded chicken. Mix gently but thoroughly to coat evenly.
  5. Preheat oven to 375°F (190°C). Spread the creamy chicken mixture evenly in a 9×13 inch oven-safe casserole dish.
  6. Sprinkle the reserved chopped bacon over the top to form a crispy bacon crust. Optionally, add extra shredded cheddar cheese on top.
  7. Bake uncovered for 20-25 minutes until edges bubble and bacon crust crisps up. Watch closely during the last 5 minutes to avoid burning.
  8. Remove from oven and sprinkle chopped green onions on top. Let rest for 5 minutes before serving to thicken slightly.

For extra crispy bacon crust, broil casserole for 1-2 minutes at the end but watch closely to avoid burning. Do not overcook chicken to prevent dryness. Softening cream cheese before mixing avoids lumps. Adjust salt carefully due to salty bacon and cheese. Can bake bacon on foil-lined sheet pan at 400°F (200°C) for 15-20 minutes as an alternative to skillet.
