Creamy Crawfish Monica Pasta Recipe with Spicy Butter Sauce

  • 1 lb (450g) pasta (fettuccine or linguine recommended)
  • 1 lb (450g) crawfish tails, peeled and thawed if frozen
  • 6 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (120ml) chicken broth or seafood stock
  • 1 tsp Cajun seasoning
  • 1/4 tsp cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 1 lb (450g) of pasta and cook according to package instructions until al dente (usually 8-10 minutes). Reserve 1 cup (240ml) of pasta water before draining.
  2. While pasta cooks, melt 4 tbsp of butter in a large skillet over medium heat. Add minced garlic and finely chopped onion. Cook for about 3-4 minutes until softened and fragrant, but not browned.
  3. Add the crawfish tails to the skillet, stirring to coat them in butter and aromatics. Cook for 3-5 minutes until they turn opaque and just start to get a little golden around the edges.
  4. Stir in Cajun seasoning, cayenne pepper (if using), salt, and pepper. Pour in the chicken broth and bring the mixture to a gentle simmer. Let it reduce slightly, about 3 minutes.
  5. Lower the heat and stir in 1/2 cup (120ml) of heavy cream and remaining 2 tbsp butter. Mix gently until the butter melts and the sauce becomes smooth and velvety.
  6. Add the drained pasta directly into the skillet with the sauce. Toss well to coat every strand. If the sauce feels too thick, add reserved pasta water a little at a time until you reach your desired consistency.
  7. Stir in fresh lemon juice and chopped parsley for brightness. Taste and adjust seasoning as needed. Serve immediately, topped with grated Parmesan cheese if desired.

Notes

Avoid overcooking crawfish to prevent rubbery texture. Use reserved pasta water to adjust sauce consistency. Butter added in two stages enhances richness. For dairy-free, substitute heavy cream with coconut cream and butter with vegan butter. Fresh crawfish preferred but frozen works if thawed and dried properly.
