  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (120 ml) sour cream
  • 1 packet (about 1 tbsp / 15 g) ranch dressing mix
  • 6 slices bacon, cooked crisp and crumbled
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 2 stalks green onions, finely sliced
  • 1/2 tsp (2.5 g) garlic powder
  • Black pepper, freshly ground, to taste
  • Optional: pinch of smoked paprika
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Place 6 slices of bacon in a cold skillet. Turn heat to medium and cook, turning occasionally, until crispy (about 8-10 minutes). Transfer to paper towels to drain. Once cooled, crumble into small pieces. Save a tablespoon of bacon grease for added flavor if desired.
  2. Set 8 ounces (225 g) of cream cheese on the counter to soften while bacon cooks.
  3. In a mixing bowl, combine softened cream cheese and 1/2 cup (120 ml) sour cream. Use an electric mixer or whisk until smooth and creamy (about 2-3 minutes), scraping down the sides occasionally.
  4. Stir in 1 packet (1 tbsp / 15 g) ranch dressing mix, 1/2 tsp (2.5 g) garlic powder, and freshly ground black pepper to taste. Mix until fully incorporated.
  5. Gently fold in crumbled bacon and 1 cup (100 g) shredded sharp cheddar cheese, being careful not to overmix.
  6. Stir in finely sliced green onions (2 stalks).
  7. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let flavors meld. For quicker serving, chill for 30 minutes.
  8. Transfer to a serving dish and garnish with additional green onions or parsley if desired. Serve with crackers, chips, or veggie sticks.

Notes

Softening the cream cheese to room temperature is essential to avoid lumps. Save some bacon grease to stir into the dip for extra smoky flavor. Chill the dip for at least an hour to let flavors meld and texture firm up. For a warm version, bake at 350°F (175°C) for 15-20 minutes until bubbly.
