  • 1 pound fresh chestnuts
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves, finely chopped
  • 1 clove garlic, finely minced
  • Pinch of salt
  • Freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Rinse the chestnuts under cold water to clean them. Pat them dry with a kitchen towel.
  3. Using a sharp knife, carefully score an ‘X’ on the rounded side of each chestnut to allow steam to escape and make peeling easier.
  4. Arrange the scored chestnuts in a single layer on the prepared baking sheet with the slit side up.
  5. Roast in the preheated oven for 20-25 minutes, or until the shells start to peel back and the chestnuts are tender.
  6. While the chestnuts are roasting, prepare the herb butter. Combine the softened butter, parsley, thyme, minced garlic, salt, and black pepper in a mixing bowl. Mix until well combined.
  7. Remove the chestnuts from the oven and let them cool slightly. Wrap them in a kitchen towel and gently rub to loosen the shells.
  8. Peel the chestnuts while they’re still warm. This step is easier when the chestnuts haven’t cooled completely.
  9. Once peeled, toss the warm chestnuts with the herb butter until evenly coated. Serve immediately and enjoy!
