A warm, hearty, and comforting pot pie made with leftover turkey, creamy filling, and flaky crust—perfect for post-holiday meals.

  • 2 cups leftover turkey, shredded or diced
  • 1 cup frozen peas
  • 1 cup frozen carrots
  • 1 cup frozen corn
  • 4 tablespoons unsalted butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken or turkey broth
  • 3/4 cup heavy cream
  • Salt, to taste
  • Pepper, to taste
  • Dried thyme, to taste
  • Pie crust, enough for top and bottom

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9-inch pie dish lightly.
  2. In a large skillet, melt the butter over medium heat. Add the flour and whisk constantly for 1–2 minutes to create a smooth, golden roux.
  3. Gradually pour in the broth, stirring continuously to avoid lumps, then add the cream. Let it simmer until thickened, about 5 minutes.
  4. Stir in the turkey, peas, carrots, and corn. Season with salt, pepper, and thyme. Taste and adjust seasoning as needed. Remove from heat.
  5. Roll out one pie crust and fit it into the bottom of your pie dish. Trim any excess dough.
  6. Pour the turkey filling into the prepared crust. Roll out the second pie crust and lay it over the top. Crimp the edges to seal and cut a few small slits in the top for steam to escape.
  7. Optional: Brush the top crust with a beaten egg for a golden finish.
  8. Bake the pie for 35–40 minutes, or until the top is golden brown and the filling is bubbling.
  9. Let the pie rest for 5–10 minutes before slicing and serving.
