Ingredients

  • Day-old bread, cut into cubes (French bread, sourdough, or a mix)
  • Unsalted butter, melted
  • Onion, finely chopped
  • Celery, chopped small
  • Garlic, minced
  • Chicken or vegetable broth, adjusted to desired moisture level
  • Fresh parsley, chopped
  • Fresh sage, minced
  • Fresh thyme, leaves removed
  • Salt and pepper, to taste

Instructions

  1. Prepare the bread: Cut your day-old bread into 1-inch cubes and set aside.
  2. Sauté the veggies: In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion, celery, and garlic. Cook until softened, about 5 minutes.
  3. Combine ingredients: In a large mixing bowl, add the bread cubes, sautéed veggies, parsley, sage, and thyme. Toss gently to combine.
  4. Add wet ingredients: Melt the remaining butter and whisk it together with the chicken broth. Pour this mixture over the bread cubes and stir until evenly coated. Season with salt and pepper.
  5. Transfer to crockpot: Lightly grease the inside of your crockpot with butter or non-stick spray. Add the stuffing mixture, spreading it out evenly.
  6. Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours. Stir once halfway through to ensure even cooking.
  7. Check for doneness: The stuffing is ready when it’s moist but not soggy, and the bread has absorbed the liquid. Taste and adjust seasoning if needed.
  8. Optional: For a slightly crunchy top, transfer the stuffing to a baking dish and broil for 2-3 minutes before serving.
