  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup (120ml) buttermilk or plain yogurt
  • For the Brown Butter Frosting:
  • 1/2 cup (115g) unsalted butter
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 12 tablespoons whole milk or cream
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash 3 ripe bananas until mostly smooth with a few small lumps.
  3. Add 1/2 cup melted butter, 1 cup granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract to the bananas. Beat until combined and slightly fluffy.
  4. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon salt, and 1/2 teaspoon ground cinnamon (if using).
  5. Add the dry ingredients to the wet mixture in three parts, alternating with 1/2 cup buttermilk or plain yogurt, starting and ending with dry ingredients. Fold gently until just combined.
  6. Pour batter into the prepared loaf pan and smooth the top. Tap the pan lightly to release air bubbles.
  7. Bake for 60-70 minutes, checking at 60 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  8. Cool the bread in the pan for 15 minutes, then transfer to a wire rack to cool completely before frosting.
  9. To make the frosting, melt 1/2 cup unsalted butter in a small saucepan over medium heat, swirling occasionally until golden brown and nutty (about 5-7 minutes).
  10. Remove from heat and let the browned butter cool for 5 minutes.
  11. Whisk in 1 1/2 cups powdered sugar, 1 teaspoon vanilla extract, a pinch of salt, and 1-2 tablespoons milk or cream until smooth and spreadable.
  12. Spread the brown butter frosting evenly over the cooled banana bread. Optionally, sprinkle cinnamon or chopped toasted nuts on top.
  13. Slice and serve.

Notes

Watch the butter carefully when browning to avoid burning. Do not overmix the batter after adding flour to keep the bread tender. Let the bread cool completely before frosting to prevent melting. Room temperature ingredients help achieve a fluffier crumb. Frozen bananas can be used if thawed and drained.
