  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar

  • 3 large eggs, separated
  • 1½ cups (360ml) whole milk, room temperature
  • ¼ cup (60g) unsalted butter, melted and cooled
  • 1 teaspoon pure vanilla extract
  • Food coloring gel: red, blue, yellow, green

Instructions

  1. Preheat your waffle maker for about 5 minutes and lightly grease the plates with butter or non-stick spray.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. Separate the eggs, placing yolks in one bowl and whites in another. Keep whites at room temperature.
  4. Add egg yolks, milk, melted butter, and vanilla extract to the dry ingredients and stir gently until just combined; batter should be slightly lumpy.
  5. Beat egg whites with an electric mixer or whisk until stiff peaks form (3-5 minutes with mixer).
  6. Carefully fold the whipped egg whites into the batter in three additions, preserving airiness.
  7. Divide batter evenly into 4 small bowls and add a drop or two of each food coloring gel (red, blue, yellow, green) to each bowl; mix gently.
  8. Using spoons or piping bags, drop alternating colored batter onto the waffle iron in small puddles, layering in a swirl pattern; about ½ cup batter per waffle.
  9. Close the lid and cook waffles for 3-5 minutes until golden brown and crisp.
  10. Remove waffles carefully and serve immediately with desired toppings.

Notes

Use gel food coloring for vibrant colors without thinning the batter. Fold egg whites gently to keep batter airy. Preheat waffle iron fully for crisp waffles. If batter is too thick after coloring, add a teaspoon of milk to loosen slightly. Can substitute gluten-free flour or plant-based milk and butter for dietary needs.
