A comforting and flavorful flatbread recipe featuring caramelized onions, tart apples, creamy goat cheese, and fresh thyme—perfect for fall gatherings or cozy weeknights.

Ingredients

Scale
  • Flatbread (store-bought or homemade)
  • 2 yellow onions, thinly sliced
  • 2 apples, thinly sliced (Granny Smith or Honeycrisp)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 ounces goat cheese, crumbled
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat olive oil and butter in a skillet over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and caramelized—about 15 minutes. Season with salt and pepper.
  3. Slice apples thinly, aiming for slices around 1/8-inch thick for even cooking.
  4. Place flatbread on the prepared baking sheet. Spread caramelized onions evenly over the base, followed by apple slices. Crumble goat cheese on top and sprinkle with fresh thyme leaves.
  5. Drizzle honey lightly over the toppings for a touch of sweetness.
  6. Bake the flatbread in the preheated oven for 10-15 minutes, or until the edges are crispy and the cheese is slightly melted.
  7. Remove from the oven, slice into pieces, and serve warm. Garnish with extra thyme if desired.

Notes

Don’t rush the caramelizing process—it’s the step that takes this flatbread from good to irresistible. Customize the cheese or herbs to suit your preferences.
