  • 5 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 eggs, room temperature
  • 1 cup heavy cream, whipped
  • 2 tablespoons powdered sugar
  • Crushed candy cane bark
  • Crushed candy canes

Instructions

  1. Preheat your oven to 325°F (163°C) and prepare your springform pan by greasing it and lining the base with parchment paper.
  2. Crush 24 chocolate sandwich cookies into fine crumbs using a food processor. Mix the crumbs with 5 tablespoons of melted butter until combined. Press the mixture firmly into the bottom of the springform pan.
  3. Bake the crust for 8-10 minutes, then let it cool completely.
  4. In a large mixing bowl, beat 24 ounces of softened cream cheese until smooth. Gradually add 1 cup of granulated sugar and 1 cup of sour cream, mixing well after each addition. Stir in 1 teaspoon of vanilla extract.
  5. Beat in 3 room-temperature eggs one at a time, ensuring each is fully incorporated before adding the next.
  6. Pour the filling over the cooled crust. Place the springform pan on a baking sheet and bake for 55-65 minutes. The center should be slightly jiggly but set.
  7. Allow the cheesecake to cool at room temperature for 1 hour, then refrigerate for at least 4 hours or overnight.
  8. Before serving, whip 1 cup of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form. Spread or pipe the whipped cream over the cheesecake and sprinkle with crushed candy cane bark and candy canes.
