Tender, juicy chicken breast stuffed with a creamy butternut squash filling, roasted to perfection. A comforting dish perfect for cozy dinners or special occasions.

  • 2 boneless, skinless chicken breasts
  • 1 cup cooked and mashed butternut squash
  • 2 cloves garlic, minced
  • 2 tablespoons fresh sage, chopped
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons breadcrumbs (use gluten-free if needed)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: pinch of nutmeg

Instructions

  1. Roast or steam the butternut squash until tender. Mash it with a fork and mix in garlic, sage, parmesan cheese, breadcrumbs, salt, and pepper. Set aside.
  2. Trim excess fat from the chicken breasts and pound them to an even thickness using a meat mallet.
  3. Place a generous spoonful of squash filling onto one side of each chicken breast. Roll the chicken tightly around the filling and secure it with kitchen twine or toothpicks.
  4. Brush the outside of the chicken rolls with olive oil and sprinkle with salt and pepper. Place them in a baking dish and roast at 375°F (190°C) for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).
  5. Let the chicken rest for 5 minutes after removing it from the oven. Slice and serve warm.

Notes

For extra flavor, add a pinch of nutmeg to the squash filling or substitute thyme for sage. If the filling peeks out during cooking, spoon it back over the chicken before serving.
