  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Black olives (sliced into small pieces for ears)
  • Chives (thinly sliced for whiskers)
  • Black sesame seeds (for the nose)
  • Paprika or food coloring gel (optional, for shading the filling orange)

Instructions

  1. Place eggs in a medium saucepan and cover with water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 10 minutes. Transfer eggs to an ice bath to cool.
  2. Peel the cooled eggs and slice each in half lengthwise. Scoop out the yolks into a mixing bowl.
  3. Mash the yolks with a fork until crumbly. Add mayonnaise, Dijon mustard, salt, and pepper, and mix until smooth. Adjust seasoning as needed.
  4. Optional: Add a pinch of paprika or a dab of orange food coloring gel to the filling for a festive touch.
  5. Spoon or pipe the yolk mixture into the hollowed-out egg whites. Smooth the tops with the back of a spoon.
  6. Slice black olives into small triangular pieces for ears. Cut chives into whisker-length strips. Place one black sesame seed in the center of each yolk for the nose.
  7. Arrange the olive ears on top of the yolk mixture, add the chive whiskers, and press the sesame seed nose into place. Adjust as needed to ensure the design looks cohesive.
