  • 1 lb refrigerated pizza dough (or homemade)
  • 2 tbsp unsalted butter, melted
  • 1 garlic clove, minced
  • 1 cup cooked chicken breast, shredded (rotisserie recommended)
  • 1/2 cup BBQ sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup thinly sliced red onion (optional)
  • 1/4 cup chopped cilantro or flat-leaf parsley (optional)
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 tbsp sesame seeds (optional)
  • Pinch crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a medium mixing bowl, combine shredded chicken, BBQ sauce, smoked paprika, and a pinch of salt and pepper. Stir until chicken is evenly coated. Add sliced onions if desired.
  3. On a lightly floured surface, roll out pizza dough to a rectangle about 12×8 inches and 1/4 inch thick.
  4. Mix melted butter and minced garlic in a small bowl. Brush over the entire surface of the dough.
  5. Evenly spread the BBQ chicken mixture on the dough, leaving a 1/2 inch border. Sprinkle mozzarella and cheddar cheese on top. Add onions and cilantro if using.
  6. Starting with the long edge, carefully roll up the dough into a tight log.
  7. Slice the log into 12 equal pieces, about 1 inch thick.
  8. Place pinwheels cut-side up on the prepared baking sheet, spacing them about 1 inch apart. Sprinkle with sesame seeds and crushed red pepper flakes if desired.
  9. Bake for 18-22 minutes, until golden brown and cheese is bubbly. Rotate pan halfway through for even browning.
  10. Let pinwheels cool for 5 minutes before serving. Garnish with extra cilantro or parsley if desired.

Notes

For gluten-free, use gluten-free pizza dough and check BBQ sauce and cheese labels. For dairy-free, substitute vegan cheese. Don’t overload the filling to prevent bursting. Chill dough if sticky. Pinwheels can be assembled ahead and refrigerated before baking. Leftovers freeze well and reheat best in the oven.
