  • 2 medium-sized apples, peeled and diced (Honeycrisp recommended)
  • 1/2 small onion, finely chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon ground cinnamon
  • Pinch of ground nutmeg (optional)
  • 2 tablespoons breadcrumbs
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • Fresh parsley, optional for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, melt the butter. Add the diced apples and chopped onion, then sprinkle with cinnamon and nutmeg. Cook for 5-7 minutes until softened. Stir in the breadcrumbs and set aside to cool.
  3. Using a sharp knife, carefully slice the tenderloin lengthwise, stopping about ¾ of the way through to create a flat surface. Open it up like a book and season both sides with salt and pepper.
  4. Spread the apple mixture evenly across the tenderloin, leaving about an inch of space around the edges.
  5. Starting from one end, roll the tenderloin tightly. Use kitchen twine to tie it securely at 1-inch intervals.
  6. Heat the olive oil in a skillet over medium-high heat. Sear the tenderloin on all sides until golden brown, about 2-3 minutes per side.
  7. Transfer the tenderloin to a baking dish and pour the chicken broth around it. Bake for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let the tenderloin rest for 10 minutes before slicing. Remove the twine carefully and serve warm.

Notes

Let the pork rest for 10 minutes after baking to allow the juices to redistribute. Use fresh apples for the best flavor, and tie the tenderloin tightly to prevent the filling from spilling out.
